Meal in a Pumpkin

I can’t believe that fall is coming around so fast. I love when Fall arrives, because that means I get to start fixing Fall foods.   One of our family’s favorite Fall recipe is Meal in a Pumpkin.  It is easy and fun to make.  Everyone loves to clean out the pumpkin and pour the rice mixture inside and then watch it bake in the oven.  There is just something fun about seeing a pumpkin baking in your oven. We usually roast the seeds that we scoop out.
Remember, when you serve this, be sure to scoop out some of the wall of the pumpkin with the rice and hamburger.  It is delicious and gives a great flavor to this recipe.  
Make sure you use a pumpkin that will fit in your oven.  Pumpkins can be deceivingly large!

Meal in a Pumpkin

Total Time 2 hours

Ingredients

  • 1 onion
  • 2 Tbl soy sauce
  • 1 can mushrooms drained
  • 1 1/2 cups cooked rice
  • 1 lb hamburger
  • 2 TBL brown sugar
  • 1 can cream of mushroom soup

Instructions

  1. Brown hamburger and onion. Add soy sauce, brown sugar, mushrooms, and soup and simmer about 10 minutes. Add rice. Spoon into medium, cleaned out pumpkin. Place pumpkin on baking sheet. Bake at 350 F for 1-2 hours. It depends on the size of your pumpkin. Check to see if pumpkin is tender with a knife about 1/3 way up the pumpkin. When you serve, scrape some of the pumpkin from the side along with the rice mixture.

    I love pumpkin. My cousin has a pumpkin patch and I get a lot of goodies. Every year he does a pumpkin carving party for his girls and their classmates. He has buckets all over the barn for the insides, which I take home and clean out all the seeds. I roast the seeds and can them for Christmas gift baskets. It’s a lot of work, but so worth it. I also swipe a few of my own pumpkins from him to cook and freeze. Some of it gets made into breads and cupcakes, others canned for smoothies and other recipes so I don’t have to buy it form the store, and some make pumpkin butter. I have mad love for October! I have pinned this. Always looking for new pumpkin recipes to try and this looks amazing!
