One of the best things about Fall is all the pumpkin desserts that I get to make and enjoy. It means a little extra running in the mornings, but it is worth it. This Fall I had some inspiration to make an easy pumpkin pudding and it turned out to taste fabulous. Like a creamy pumpkin pie, but with less work.
With just a few simple ingredients and a few minutes of time, you can make a wonderful dessert that tastes like Fall and would be perfect to serve at your Thanksgiving meal.
The recipe is below. You will want to print and keep this one for your holiday meal plans.
Easy Pumpkin Pie Pudding
- 1 4- serving package of instant vanilla pudding
- 2 cups milk
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp cloves
- 1/2 cup canned pumpkin
- Gingersnaps crushed and whole
Mix pudding mix, milk and spices together.
Mix as directed on pudding package.
After the pudding has thickened, mix in canned pumpkin
Mix until well blended
Place some crushed gingersnaps into 4 individual pudding cups
Pour pudding on top
Refrigerate 2 hours or until pudding is set
Before serving, garnish with whipped cream and a whole gingersnap
