One of my favorite things about fixing a ham, is making this Ham and Lentil Soup with the ham bone and left over ham. It is easy to make and SO flavorful. I love the fact that this recipe lets me use up every last bit of ham. Plus it is chocked full of great things for your body. Carrots, tomato and the superfood, Lentils. I could eat cup after cup of this soup and feel great eating it. I hope you enjoy the recipe!
Ham & Lentil Soup
- 1 leftover ham bone
- 10-12 cups water
- 4 medium carrots finely diced
- 1 medium onion finely diced
- 3 cans tomato paste 6 ounce
- 1 TBL white vinegar
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 black pepper
- 2 tsp italian seasoning
- 1 1/4 cups dried lentils rinsed
- 1 cup diced ham
In a large pot, put in the ham bone and cover with water.
Bring to a boil
Turn down heat and let simmer for 1 hour, covered
Remove ham bone from water, save the broth
Remove as much ham from the bone as possible, saving for the soup
Add the carrots, onion and lentils to broth
Bring to boil, reduce heat, cover and simmer for 20-25 minutes
Stir in remaining ingredients.
Return to a boil.
Reduce heat and simmer, uncovered for 10 minutes.
