PEEPS® have been my favorite Easter candy since I was a kid. I love the taste, texture and everything about them. I love how they each have their own personalities. Look carefully, because no two peeps are exactly alike. It makes it more fun. My favorite way to eat them is when they have sit out for a couple of days and they get a little chewy- delicious!
To make eating PEEPS® even more fun, I have come up with fun PEEPS® Surprise Eggs. They are easy to make and they kids love them. My kids kept telling me how cute they were, and they also enjoyed eating them.
You will need:
1 package PEEPS® Chicks
1 10 oz bag marshmallows
6 1/2 cups crisp rice cereal
4 TBL butter
1 tsp vanilla
frosting and sprinkles of your choice
Melt butter and marshmallows over low heat, stirring occasionally. When melted add vanilla and rice cereal. Stir until all combined. Remove from heat.
While the mixture is still warm, grab a small handful of the mixture and start forming an egg shape. Place a PEEP in side and gently keep forming the egg around the chick. Grab some more mixture and form the “lid” of the egg. Gently press the crispy treat mixture around the peep and into an egg shape. Repeat for as many PEEPS® as you can.
Tips: keep the crispy treat mixture that you are not using in the pan, but off the heat to keep it warm so you can work with it.
Work quickly! Once it cools, you won’t be able to shape it.
Have fun. The kids will love this project!
When you have finished forming all the eggs, decorate with frosting and sprinkles. Make them as elaborate or simple as your heart desires.
These are such a fun treat. Imagine the surprised eyes when they bite into their crispy egg to discover a sweet and taste PEEPS®!
