Carrot Cake Waffles

carrot cake waffles 2Waffles are one of my favorite breakfast foods, but I usually fix waffles for dinner at least once a month.  It is one of our favorite meals.  

carrot cake wafflesI have been craving a good piece of carrot cake lately, but I didn’t want to make a whole cake, so I came up with an amazing carrot cake waffle recipe.

Of course I had to nibble on these as I was cooking them, just to make sure that the recipe was alright.  I couldn’t stop eating them, so I knew I had a winner!

carrot cake waffles 6They are moist, sweet, and utterly delicious.  The cream cheese “syrup” has pecan pieces throughout which makes it wonderfully rich and tasty.  I hope you and your family enjoy this recipe as much as we did.  I think it will end up in your keeper pile.

Carrot Cake Waffles

a wonderful waffle recipe that tastes like a decadent carrot cake.

  • 2 cups flour
  • 3 tsp baking powder
  • 3 eggs
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup canola oil
  • 1/2 cup milk
  • 1 1/4 cup finely chopped carrots

Cream cheese Syrup

  • 8 oz cream cheese softened
  • 2 cups powdered sugar
  • 1/2 tsp vanilla
  • 1/2 cup chopped pecans
  • 1/4-1/2 cup milk


  1. Mix all the waffle ingredients together.
  2. Stir until just well combined, there may be a few lumps
  3. Cook on a hot, well greased waffle iron

Cream Cheese Syrup

  1. Combine cream cheese, sugar and vanilla.
  2. Add milk a little at a time to get desired consistency

Recipe Notes

The cream cheese syrup will be thick. You can the thickness by adding more or less milk.

    Is there something missing from the waffle ingredient list here? My batter was extremely thick when I followed the list above. To get it to spread and make waffles in my iron I had to add about 1/4-1/2c milk.
