Strawberry Roll

This beautiful strawberry roll has a light and fresh flavor.  The colors are amazing making it so pretty to look at, but it is even better to eat!

 It is strawberry season here in East Tennessee and I am so excited.  Every year I gather the family and we go to a local pick your own strawberry farm and pick pounds and pounds of fresh, sweet, strawberries to make my amazing low-sugar strawberry jam.  After making jam, we always have strawberries left over and it is fun to figure out what to do with them.  I always love making “strawberry cereal”.  It is just sliced strawberries in milk sprinkled generously with powdered sugar.  It is a wonderful and simple treat.  My strawberry bars are also fun to bake using the strawberry jam.

I also love to make this strawberry roll.  It takes a little time to make, so plan ahead.  It needs to bake, cool and then refrigerate.  This cake roll however, is a show stopper.  Wherever you take it you will get oohs and aahs and requests for the recipe.  It tastes very fresh and light and it is not too sweet, so you can enjoy all the flavor of the fresh berries.  Enjoy this wonderful dessert this strawberry season.


Strawberry Roll

Servings 8



  • 4 eggs separated: at room temperature
  • 2/3 cup sugar divided
  • 1 TBL milk
  • 1/2 cup flour
  • Zest from one lemon
  • 1/4 tsp cream of tartar


  • 8 ounces neufch√Ętel cheese at room temperature
  • juice from one lemon
  • 2 TBL sugar
  • 16 oz fresh strawberries sliced
  • 1/3 cup powdered sugar for the towel
  • 1 TBL powdered sugar for dusting


  1. Coat a 15x10x1 baking pan with cooking spray
  2. Line with waxed paper and coat generously with cooking spray
  3. set aside
  4. Preheat oven to 375
  5. Add cream of Tartar to egg whites
  6. Beat at medium speed until soft peaks form
  7. Gradually add 1/3 cup sugar
  8. Beat on high until stiff, glossy peaks form
  9. Set aside
  10. In a mixing bowl, beat the egg yolks 1/3 cup sugar, milk and lemon zest
  11. Gradually stir in flour
  12. Add egg whites to this mixture
  13. Gently fold into mixture
  14. Gently spread batter onto prepared pan.
  15. Bake 8-10 minutes until lightly browned
  16. Cool for 5 minutes
  17. Turn cake onto a tea or kitchen towel generously dusted with the 1/3 cup powdered sugar
  18. Gently peel off waxed paper
  19. Roll up cake jelly roll style starting with a short side
  20. Cool completely
  21. In a small bowl combine cream cheese and lemon juice
  22. unroll cake and spread filling evenly over cake
  23. Sprinkle with sugar and strawberries
  24. Roll up again
  25. Dust with powdered sugar
  26. Cover and chill for at least an hour before serving
 Colorful and beautiful this strawberry roll looks pretty and has a wonderful light texture and rich flavor when made with fresh strawberries.  It is not too sweet, so you get to enjoy all the goodness of the berries.
