The time where we all come together as a family to enjoy a good meal and reconnect. Growing up we always had dinner together. I looked forward to Mom’s good food and hearing about everyone’s day and of course having a good laugh. We have the same tradition in my family today. We make it a top priority to have dinner together as much a possible. I love to serve great meals and to hear from everyone about their adventures. The kids even like to quiz us with things they have learned at school to see how “smart” their parents are.
Usually I keep the meals and the table simple. But every once in a while I like to dress it up a bit to make meal time feel more special. The Italians are wonderful at making meal time a place to create memories. The Italian word to eat is “Mangia” and I tried to create a meal where we could “Mangia” the Italian way.
During my weekly shopping trip to Kroger I discovered they were featuring a great deal on new Bertolli Family-size Chicken Florentine in the frozen section. It looked like a wonderful staple to begin my Italian meal.
The Chicken Florentine was incredibly easy to fix. It took about 15 minutes from start to finish and it was all done in one pan!
It turned out simply delicious with a beautiful sauce and rich flavor. To compliment the pasta I decided to serve a green salad with homemade croutons. If you have never made homemade croutons then you are in for a real treat. They are crispy, crunchy and delicious. In fact I have eaten them on their own as a snack, no salad needed. The printable recipe is at the end of the post, but here is what you will need:
1 Loaf Italian Bread
4 TBL Olive Oil
Salt and Pepper to taste
Cube the bread into 1″ size piece and place in a large bowl. Toss with the olive oil. Lay in a single layer on a baking sheet with sides. Salt and pepper to taste. Bake at 400 for 10-12 minutes or until lightly browned.
This is a wonderful, simple meal that comes together in minutes. Of course no Italian meal would be complete without a decadent dessert.
