Today I am excited to share with you my absolute favorite recipe for skinny banana bread. I have been making this recipe for well over 20 years and it doesn’t disappoint. In fact I have tried other recipes and I always return to this one. It has such a deep, rich flavor and the banana really stands out. I always get excited when I have overripe bananas because it means I can make this bread.
I also love how banana bread makes the house smell while it is baking. It smells wonderful, it smells like home. It is one of the best baking smells in my opinion. When my family smells this bread baking they all huddle around the oven waiting for it to come out. It is so good served warm with just a dab of butter. I like to use bananas that our really overripe. Fairly brown and soft. I also use a kitchen aid mixer to whip up the batter and I just throw the peeled bananas in whole and let the mixer smash them up. Since my bananas are always really ripe and soft this does the trick nicely. I use sour cream instead of butter to make this bread lighter. If you want it really decadent replace the sour cream with softened butter. Next time you have some over ripe bananas you will want to treat your family to this recipe.
Skinny Banana Bread
- 1 cup sugar
- 1/2 cup sour cream
- 2 eggs
- 2-3 over ripe bananas
- 1 1/3 cup flour
- 1/2 tsp salt
- 1 tsp baking soda
Preheat oven to 325
Mix together sugar and sour cream
add eggs and peeled bananas
Add remaining ingredients mixing until just combined
Place batter in a greased loaf pan
Bake at 325 for 40-50 minutes or until a toothpick in the middle comes out clean
