banana pudding 10Growing up my husband’s favorite dessert that his grandmother served was southern banana pudding.  Except he called it “cookie pie”.  He really only liked the way his grandmother made it, so I have always been nervous to make it thinking he would not like the way I created it.  So… I have only made it 1 or 2 times in the 22 years we have been married.

I decided I would give making banana pudding another try.  As a was perusing the isles in Kroger I saw Keebler Vanilla Wafers and decided I would put a little twist on an old classic and make individual southern banana pudding in mini trifle dishes (that I also found a Kroger)

To make a great southern banana pudding you need to plan ahead to give the dessert time to sit in the refrigerator and moisten the Vanilla Wafers to perfection and let all the other flavors gel together.   My general rule of thumb is at least overnight.

The printable recipe is below, but I will walk you through the steps here.  You will want to make sure you coat the banana slices with a small amount of lemon juice to keep them from browning.  This will help to make your southern banana pudding look beautiful.

Once the pudding was made I got everything ready to assemble my mini southern banana puddings.  They take a little more time than doing one big one, but they are so fun.

banana pudding collageI put one cookie in the bottom of the trifle dish and covered it with a small scoop of pudding.  Then I lined vanilla wafers along the side, added a little more pudding, a layer of banana slices and one vanilla wafer in the middle.  On top of that layer I added a big scoop of pudding, more banana slices and one more vanilla wafer.

banana pudding 11I covered them and set them in the fridge overnight to develop all it’s wonderful goodness.  Right before serving you can top with some whipped cream and one more vanilla wafer.  Now it is ready to enjoy.

banana pudding 12They are elegant enough to serve at a nice meal, and fun enough to enjoy on a casual night with the family.  I made these with the intention of serving them at Sunday dinner, but we were so full we saved them for later in the evening to enjoy casually while talking to far away family.

Southern Banana Pudding

Ingredients

  • 1 14 oz can sweetened condensed milk
  • 1 1/2 cups water
  • 1 4 serving package instant vanilla pudding
  • 1 pint heavy whipping cream
  • 2 TBL sugar
  • 4 medium bananas
  • 1 TBL lemon juice
  • Vanilla Wafers

Instructions

  1. Combine the condensed milk, water and pudding mix in a bowl
  2. Beat with an electric mixer for 2 minutes
  3. Cover and chill 5 minutes
  4. Pour the heavy whipping cream into a bowl and add the sugar
  5. With an electric mixer whip the cream until tall peaks form
  6. Peel and slice bananas
  7. Toss with lemon juice
  8. Fold 2 cups of whipped cream into the pudding mixture
  9. Place 1 vanilla wafer in the bottom of a mini trifle dish
  10. Add a small scoop of pudding
  11. line the sides of the dish with vanilla wafers
  12. Add a scoop of pudding
  13. Add a layer of bananas
  14. Place on vanilla wafer on top of the bananas
  15. Add a scoop of pudding
  16. Add a layer of bananas and a vanilla wafer
  17. Cover and refrigerate overnight
  18. Add a dollop of left over whipped cream before serving.

    While I love the way my grandma has been making banana pudding according to the Nilla Wafers box, I also suggest trying it with the Nabisco graham crackers at least once. I did that last time and the cinnamon-y flavor definitely added a little extra.
