Last spring I had the amazing opportunity to travel to the Dominican Republic and pick up my oldest daughter who had been there for 18 months serving a church mission. While I was there I met the most incredible people who were so humble and willing to share what little they had. One of the best treats I had there was coconut candy. It had great texture and flavor and was so good to eat. I knew that I could come up with or make up a recipe that resembled this little nugget of goodness and I think that I have done it. I found a recipe in one of my vintage cookbooks and tweaked it a little bit (or probably a lot of bit) and made this delicious recipe for Easy Coconut Candy.
This was seriously so good that I couldn’t stop eating it. I kept going back for more. It doesn’t have very many ingredients and it really simple to make. I think that I will be making some at Christmas to give away as goodies. I know you will love these simple little candies. Plus they won 3rd place at the county fair!
- Easy Coconut Candy
- - 2 Cups sugar
- - 2 TBL butter
- - 1/2 cup Half & Half
- - 2 1/2 cups sweetened grated coconut
- - 1 tsp vanilla
- 1) Stir sugar, butter and milk over medium heat until sugar is dissolved
- 2) Continue stirring while cooking slowly to soft ball stage (263 degrees)
- 3) Remove from heat
- 4) Stir in coconut and vanilla
- 5) Place in buttered 8x8 pan and cut into squares at once
