Easy Coconut Candy

5-ingredients and a few minutes are all you need to make this delicious, award winning coconut candy.

coconut-candyLast spring I had the amazing opportunity to travel to the Dominican Republic and pick up my oldest daughter who had been there for 18 months serving a church mission.  While I was there I met the most incredible people who were so humble and willing to share what little they had.  One of the best treats I had there was coconut candy.  It had great texture and flavor and was so good to eat.  I knew that I could come up with or make up a recipe that resembled this little nugget of goodness and I think that I have done it.  I found a recipe in one of my vintage cookbooks and tweaked it a little bit (or probably a lot of bit) and made this delicious recipe for Easy Coconut Candy.

coconut-candy-4This was seriously so good that I couldn’t stop eating it.  I kept going back for more.  It doesn’t have very many ingredients and it really simple to make.  I think that I will be making some at Christmas to give away as goodies.  I know you will love these simple little candies.  Plus they won 3rd place at the county fair!


Easy Coconut Candy


  • 2 Cups sugar
  • 2 TBL butter
  • 1/2 cup Half & Half
  • 2 1/2 cups grated coconut
  • 1 tsp vanilla


  1. Stir sugar, butter and milk over quick heat until sugar is dissolved
  2. Continue stirring while cooking slowly to soft ball stage (263 degrees)
  3. Remove from heat
  4. Stir in coconut and vanilla
  5. Place in buttered 8x8 pan and cut into squares at once

      I haven’t tried it in the microwave. I does take a while to get the temperature up on the stove, so I don’t know how it would work in the microwave.

    Do you think this could work with coconut milk in place of the half and half? My daughter can’t have dairy.

      It might. The 1/2 and 1/2 I think would make the candy more firm than the coconut milk would be my guess. Maybe try it with less of the coconut milk?
