Praline Mini Cheesecakes

praline-cheesecake-7Every so often I come across a dessert that is over the top, out-of-this-world, and surely a keeper.  Praline mini cheesecakes is one of those desserts.  Every time I make them, and share them, people remember them and talk about them long afterwards.  They create a memory that can’t be forgotten.  A happy memory that you will want to share with others, so today I am sharing the recipe with you.

praline-cheesecake-5This recipe is a little bit time consuming, but not difficult.  Because it has different layers of cake, which all take separate prep time, it takes a little longer.  It has the most glorious layer of praline, which is basically butter, sugar and chopped pecans.  I am a little spoiled because I have my own personal supply of almost endless pecans.  My mom and dad now own my grandfather’s homestead which is blessed with several mature pecan trees that he planted over the years.  They harvest them every year, and my mom will shell the pecans throughout the coming months and share them with me.  One of my best Christmas gifts was a big gallon sized bag of fresh, shells pecan halves straight from Grandpa’s farm.

praline-cheesecake-4These Praline Mini cheesecakes I made using a standard sized muffin pan and I lined them with the metallic liners.  You can serve them in the liners or you can peel them off.  I did spritz a little cooking spray in each liner to make it release easily.  I have also cut them in half of quarters to make more bite-sized treats.  I have made them in a well greased mini muffin tin with a lot of success, but it was a lot more prep work too.  So you have lots of options.

praline-cheesecake-2These freeze really well too.  In fact with this batch I had a few left over that I didn’t need to eat (but I sure wanted to!).  I wrapped them individually in plastic wrap and then put them in a gallon zip-top bag to pull out whenever I wanted a treat.  They came in handy when I needed a sweet to bring to a party and didn’t have time to prepare one.  I hope you enjoy this recipe as much as we do!


Praline Mini Cheesecakes


Cookie Crust

  • 26 chocolate cream-filled sandwich cookies
  • 1/2 cup butter melted
  • 1 cup chopped pecans


  • 1 1/2 cups butter cubed
  • 1 cup packed brown sugar
  • 1 tsp vanilla


  • 2 8- oz packages cream cheese softened
  • 1/2 cup powdered sugar
  • 1/3 packed brown sugar

Ganache topping

  • 1 1/2 cups dark chocolate chips
  • 1/2 cups half and half


  1. For the cookie crust with a food processor crush cookies together
  2. Add the melted butter and combine
  3. Press 2 tsp of mixture into the bottom of a lined muffin tin
  4. Bake at 350 for 5-6 minutes, cool
  5. Sprinkle with pecans


  1. In a large saucepan over medium heat, bring butter & brown sugar to a boil
  2. Stir constantly
  3. Reduce heat and simmer, uncovered for 10 minutes
  4. Remove from heat & stir in the vanilla.
  5. Pour over the pecans
  6. Refrigerate for 1-2 hours until set


  1. In a large mixing bowl, beat filling ingredients until smooth
  2. Spread over Praline layer
  3. Refrigerate for 1-2 hours until set


  1. In a microwave safe bowl, melt chocolate chips with 1/2 and 1/2.
  2. Microwave 30 seconds at time stirring between each until melted
  3. Cool slightly then spread over filling
  4. Refrigerate 1-2 hours until set.
  5. Remove from muffin tin and serve
  6. Refrigerate leftovers

    I always have a stash of pecans in my freezer and save them just for the right recipe! I know I’ll be a fan of these praline mini cheesecakes too – I’m drooling over the pictures!

    I love all these layers! From the cookie crust to the ganache. And personally I don’t mind the steps. Usually the effort makes the first bite all the more glorious!
