Turkey & Wild Rice Soup

A light version of a classic soup that is chocked full of vegetables and is a perfect way to use leftovers


The cold, wet days of the year have begun and I am so excited because I feel like fixing lots of good soups for dinner.  To me there is nothing more comforting than a hot bowl of delicious homemade soup to warm the body and soul.  My family loves this Turkey & Wild Rice Soup and will quickly eat up the whole pot.  I know I am posting this too late to use Thanksgiving leftovers, but this soup is perfect to use up all those left-overs that linger in your fridge!  It has lots of celery, turkey and chicken broth in it.  Things I always have left after fixing the big Thanksgiving meal.  I did change some things to make this soup lighter and a touch healthier than many creamy soups.  I use skim milk instead of cream or half & half.  It does have some butter and flour which helps to thicken the milk and make the soup creamy.  Instead of the chicken broth sometimes I have used left over turkey gravy that is watered down with water (about the same amount as the gravy).  This gives the soup a wonderful flavor also.  I use brown rice and wild rice.  I love wild rice.  It has such a nutty flavor and the texture is amazing.  The soup does need to simmer for at least an hour to get the rice tender so be sure and plan accordingly.   This soup is easy to make and hearty and delicious.  It will fill you up for sure.  It also has lots of carrots so I can make sure the family gets lots of good vegetable in this one pot meal.  

turkey-soup-collageI like to serve this soup in bread bowls.  You can use your favorite homemade roll recipe or buy frozen dough.  I made the bread bowls using a ball of dough just smaller than my fist and then let it raise.  You don’t want a huge bread bowl for an individual serving.  This is like a large roll and it is plenty for one.  Carefully cut out a top and then gently remove the insides.  Save these to enjoy while eating the soup.

turkey-soup-5I also like to have a jar of honey on the table as we eat our soup.  It goes perfectly with the bread bowl.  I hope you enjoy this hearty soup!


Turkey & Wild Rice Soup


  • 2 med onions diced
  • 1 cup carrots diced
  • 5 celery ribs diced
  • 1/4 cup butter
  • 1/2 cup flour
  • 1 cup chicken broth or left over gravy with water
  • 3 cups fat free milk
  • 2 tsp salt
  • 1 tsp pepper
  • 1 cup brown rice
  • 1 4 oz package Wild Rice
  • 1 1/2 cups cooked turkey diced


  1. melt the butter in a large dutch oven
  2. add the onions, celery, and carrots, cook until tender
  3. sprinkle flour over the vegetables
  4. stir until combined
  5. slowly add chicken broth
  6. stir until thickened
  7. add milk, salt and pepper
  8. Stir to combine
  9. Slowly bring a boil
  10. Add brown rice, wild rice and turkey
  11. Stir to combine
  12. Reduce heat and simmer for 1 hour or until rice is tender
