This cilantro dressing is probably my favorite homemade dressing that I make. It has so much great flavor I could probably eat it by the spoonful if I let myself. I also like it because I can keep most of the ingredients on hand in my pantry or fridge, so it is easy to whip up. The amazing green color comes from 1/2 a bunch of cilantro blended in. Isn’t it beautiful? Cilantro is one of my favorite fresh herbs. I love the way it smells. It is just so crisp and fresh and wonderful. It reminds me of summer even in the dead of winter. It is also fairly easy to grow in your garden. We bought some seeds one year and sprinkled them along the border of our garden and we had some great cilantro pop up. It was wonderful to use in salsa with our fresh tomatoes. Did you know that the seeds of the cilantro plant are also another herb? In seed form they are called coriander and they have a wonderful lemony flavor.
Cilantro dressing can be used as a topping for many recipes. It is good on salads, or over fresh tomatoes. My favorite way to use in is on Slow Cooker pork burritos. It really helps to bring out the flavor of all the ingredients. I must confess that this dressing is so good, I use it quite liberally on my meals. I like to keep a jar of minced garlic in the refrigerator to use in this kind of recipe. It keeps me from having to chop up fresh garlic all the time and it still has a great flavor. I hope you enjoy this cilantro dressing as much as I do. This dressing should stay fresh in the fridge for 1 to 2 weeks.
- 1 pkg dry ranch dressing
- 1/2 a bunch cilantro
- 2 tsp minced garlic
- 1/2 cup light mayonnaise
- 1/2 cup buttermilk
- 3 TBL lime juice
- Place all the ingredients in a blender and blend until smooth.
- If it is too thick add more buttermilk
