I am so thankful that someone had the smarts and know how to invent the slow cooker. It sure makes my life of cooking wholesome meals for the family so much easier. I love that I can throw a main meal in the slow cooker during the day when things are quieter around the house so that dinner will be easy to make when everyone gets home and things are a bit crazy. My recipe for slow cooker pork burritos is a family favorite. One of the things that I like about it is that each person can customize their burritos to their own unique taste. One of my kids likes lots of cheese and another prefers more lettuce. With this easy recipe to each his own without any fussing.
I use a 3-4 pound Pork Butt roast for this recipe. I wait of it to go on sale for a good price which is usually around $1 a pound. I then buy about an 8 pound roast and cut it in half and freeze one portion to enjoy this recipe in the future. Even with doing that our family of 6 will have enough meat left for some great lunches during the week using this recipe.
The way you top your burrito is very personal, so I leave that up to you . Around these here parts we use shredded cheese, tomatoes, lettuce, sour cream and my delicious homemade cilantro dressing. (I honestly can’t get enough of that stuff!) . Avocado would also be a delightful topping. To make the meat spicier you can add a tablespoon or two of chopped jalapeno pepper or some hot sauce depending on your tastes.
Since this recipe makes so much meat it would make a great meal to serve when you are hosting guests. A fun burrito bar would make a great party theme. Anyway you slice it I think you will really love my slow cooker pork burritos.
- 1 pork butt roast (3-4 pounds)
- 1 can diced tomatoes with chilies, undrained
- 4 TBL chili powder
- 2 TBL minced garlic
- 3 TBL lime juice
- 1 TBL honey
- 1/2 tsp salt
- Place roast in a slow cooker
- Place the rest of the ingredients in a blender
- Blend until smooth
- Pour over pork
- Cook on low for 8-10 hours
- Shred meat with two forks
- Serve on a tortilla with your preferred toppings
