It’s that time of year again. It seems rolls around more quickly every year. The time when lazy summer days are over and the kids go back to school. The first day of school is much earlier than when I was a student. The first day of school for my kids was Aug. 2. Really early, but we get a great fall break at the beginning of October. Every year I like to celebrate their success at having navigated the first day with a special cake to enjoy as a family at the end of the day. Usually I do a School Bus cake that is super cute. This year I felt like going a little easier and made easy back to school cupcakes.
I whipped these up in no time at all. I used a chocolate cake mix to bake the cupcakes. I then frosted them with my homemade chocolate frosting. (You really never can have too much chocolate). You could also use a jar of frosting from the store. Then I simply piped on writing lines and then added ABC’s using vanilla frosting in a piping bag with a writing tip. It was simple and easy and the kids were thrilled to have them at the end of their long day.
I made a fun and easy display for the cupcakes on my sideboard with a sheet of green poster board, over-sized notebook paper from the scrapbook section, a ginormous pencil I have and pompom’s in our school colors. It was super simple to set up, but brought smiles to everyone’s face on the first day back to school. (I actually think the second day is harder, reality has set in, the excitement is gone and it is so hard to wake up!). I hope these fun cupcakes will make your first day back to school the best it can be.
