No Bake Pumpkin Bars

 
No oven needed for these delicious pie like no bake pumpkin bars.  They are a perfect addition to the Thanksgiving dessert table

In the fall I love to try all sorts of pumpkin flavored desserts and treats.  We have our staple pumpkin chip cookies that we make several times a year.  So delicious, cakey and chewy, the kids love them.  I also enjoy a good slice of pumpkin bread and this year I found the best recipe yet.  My pumpkin blondies have been a hit this year with several requests for the recipe.  Any of these are perfect to enjoy all fall long or to bring to share at the Thanksgiving table.

Today I am sharing my recipe for no bake pumpkin bars.  They are very much like pumpkin pie, but are made in a large 13×9 pan and the filling is cooked on the stove top.  No baking needed, so they will free up oven space on Thanksgiving which is always a good thing.  I took a batch to our trunk-or-treat and they were gone with in minutes.  I also shared a picture of them with my photography class that I am taking and there were immediate oohs and aahs and requests for the recipe.  I hope you enjoy this easy recipe for no bake pumpkin bars.

 

No Bake Pumpkin Bars
Ingredients
  1. 1 10 oz bag large Marshmallows
  2. 1 can Pumpkin (not pumpkin pie filling)
  3. 1 tsp cinnamon
  4. 1/4 tsp cloves
  5. 1/2 tsp ginger
  6. 1/4 tsp nutmeg
  7. 1 small container whipped topping
  8. 4 cups crushed graham crackers
  9. 2/3 cup butter, melted

Instructions
  1. In a large sauce pan cook the marshmallows and pumpkin over medium heat until melted
  2. Remove from heat and stir in spices
  3. Let cool until just warm
  4. Meanwhile combine the graham cracker crumbs and butter together in a bowl
  5. Reserve 1 cup of mixture to sprinkle on top
  6. Press the remaining 3 cups of crumbs into a greased 13x9 pan
  7. Gently fold in Whipped Topping into pumpkin mixture
  8. Spread over the crust
  9. Sprinkle with reserved crumbs
  10. Chill several hours or over night
