MUMMY PIZZA served with ROASTED GREEN SNAKES
I love Halloween themed meals. They take something we eat all year long, put a little twist on in and make it become a fun new meal. One of our all time favorites is Mummy Pizza. We have been making this Pizza for years, and love it. This year I decided to add some healthy fun with green beans in the form of “roasted green snakes”. My kids loved it and gobbled up everything on the platter.
1 lb bread dough
2 cups mozzarella cheese
about 25 pepperoni
The fist step is to roll your dough into a “mummy shape”. It will be wider at the shoulders and narrower at the feet.
My mummy was 22″ long and 15″ wide at the shoulders.
Next spread your choice of pizza sauce in a rectangle. Then sprinkle on your cheese and pepperoni.
With a knife, leaving the head and feet whole, cut 1 inch strips stopping at the sauce. This will become the “wrappings” of the mummy.
Fold the dough at the head over to resemble the head of the mummy. Then take one of the 1″ wrapping piece from each side and meet them in the middle. Continue down the mummy to the feet, which you will fold over to resemble the foot of the mummy. For the eyes I tore two outer edges of a pepperoni and pressed it into the dough. Brush the dough with a Tablespoon of olive oil and bake at 425 for 15-20 minutes.
ROASTED GREEN SNAKES
1 lb fresh green beans, washed and the ends snapped off
2 Tbl olive oil
On a heavy cookie sheet with sides toss the green beans with the olive oil. Spread out in an even layer and salt to desired taste. Roast at 425 for 15 minutes. Stir beans and roast for another 10-15 minutes until desired crispness is reached.
