Peanut Butter Pumpkin Cookies

With Thanksgiving right around the corner we have been baking a lot around our house.  We love  peanut butter cookies, so we decided to put a fall twist on them and turned them these great peanut butter pumpkin shaped cookies.

Peanut butter cookies

Prep Time 10 minutes

Ingredients

  • 3/4 natural peanut butter
  • 1/2 shortening
  • 1 1/4 cups firmly packed light brown sugar
  • 3 TBL milk
  • 1 TBL vanilla
  • 1 egg
  • 1 3/4 cups flour
  • 3/4 tsp salt
  • 3/4 tsp baking soda
  • about 30 pretzel twists with ends broken off for stems

Instructions

  1. Preheat oven to 375
  2. Combine peanut butter, shortening, brown sugar, and milk in mixer bowl.
  3. Beat at medium speed until blended
  4. Add the egg and vanilla. Combine.
  5. Combine flour, salt and baking soda.
  6. Add to creamed mixture
  7. Mix until just blended
  8. Roll into 1 1/2 inch balls and place on cookie sheet
  9. With a sharp knife cut 6-8 slits in the sides leaving the middle intact for the stem
  10. Bake at 375 for 7-8 minutes
  11. Remove from oven and immediately place pretzel "stems" in the middle of the cookies
  12. Let cookies cool.

peanut butter pumpkin cookies4Bake the cookies 7-9 minutes.  Remove from the oven and insert a pretzel twist  into the middle.  Cool on a wire rack.
