Of course I had to nibble on these as I was cooking them, just to make sure that the recipe was alright. I couldn’t stop eating them, so I knew I had a winner!
They are moist, sweet, and utterly delicious. The cream cheese “syrup” has pecan pieces throughout which makes it wonderfully rich and tasty. I hope you and your family enjoy this recipe as much as we did. I think it will end up in your keeper pile.
Carrot Cake Waffles
- 2 cups flour
- 3 tsp baking powder
- 3 eggs
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup canola oil
- 1/2 cup milk
- 1 1/4 cup finely chopped carrots
Cream cheese Syrup
- 8 oz cream cheese softened
- 2 cups powdered sugar
- 1/2 tsp vanilla
- 1/2 cup chopped pecans
- 1/4-1/2 cup milk
Mix all the waffle ingredients together.
Stir until just well combined, there may be a few lumps
Cook on a hot, well greased waffle iron
Cream Cheese Syrup
Combine cream cheese, sugar and vanilla.
Add milk a little at a time to get desired consistency
The cream cheese syrup will be thick. You can the thickness by adding more or less milk.
