I am so excited for fresh juicy strawberries to make all sorts of recipes with. Desserts are one of my favorite things to make with fresh strawberries. This year I decided to step outside my box a little bit and add some new flavors to a strawberry dessert. We have lots of fresh mint growing around and I know it adds a different but refreshing flavor to recipes. I decided to try it in these frozen mint strawberry mini pies for a more gourmet flavor and they turned out wonderfully.
I was able to pick up all the ingredients I needed on a run to Walmart the other day. I thought a combination of cream cheese, fresh strawberries, fresh mint, Dannon® Light & Fit® Strawberry Cheesecake Greek Yogurt, Reddi-wip®, and Keebler® Ready Crust® Mini Graham Cracker Pie Crusts would be the perfect ingredients for a frozen mini pie perfect to enjoy in the warm weather.
I have the printable recipe below, but I will quickly walk you through the steps here. I simply added softened cream cheese, fresh strawberries, fresh mint, and Dannon® Light & Fit® Strawberry Cheesecake Greek Yogurt to my food processor and mixed it up so the strawberries and mint leaves were finely chopped and everything was well incorporated. I then folded in some Reddi-wip® to make it light and fluffy. I used a cookie scoop to scoop the filling into the pie crusts. This way I was able to easily control the amount of filling I was putting in and it made the pies look beautiful. To keep the pies easily contained I put them in a glass cake pan so they could be placed in the freezer without much hassle.
The pies freeze fairly quickly within 1-2 hours. Let them sit out a few minutes before serving to soften them just a bit. To serve, top them with some more Reddi-wip® and garnish with a mint leaf.
They turned out beautifully and are so fun to serve at a BBQ or picnic, Mother’s Day, Fourth of July or any occasion where a sweet little treat would be welcome.

Frozen Mint Strawberry Mini Pies
- 2 oz softened cream cheese
- 1/2 cup sliced fresh strawberries
- 1 5.3 oz Dannon® Light & Fit® Strawberry Cheesecake Greek Yogurt
- 10-15 Fresh Mint leaves depending on taste preference
- 1/2 cup Reddi-wip®
- 6 Keebler® Ready Crust® Mini Graham Cracker Pie Crusts
Add the first 4 ingredients to a food processor
Process until ingredients are all well blended and the strawberries and mint are finely chopped
Gently fold in the Reddi-wip®
Pour filling into crusts
Freeze for 1-2 hours before serving
Serve with Reddi-wip® and garnish with a mint leaf
