To make this recipe even quicker to fix I picked up a Smithfield Slow Cooked Mesquite Flavored Pork Loin Filet while I was shopping at Walmart. They are on roll back during the month of April and are perfect to use for a weeknight dinner. I like this recipe because it is full of fresh vegetables that are colorful and flavorful. While my skillet is heating up to a medium-high heat, I sliced up 1 yellow, orange, red and green bell pepper and 1 yellow onion. When the skillet is ready, sauté 1 Tbl minced garlic in 1 TBL olive oil for one minute. Then add the peppers and onions. Allow the peppers and onions to cook for 6-8 minutes until just tender.
