Easy Lava Cakes

My daughter needed a quick, but elegant dessert for a youth activity. We came up with this an easy lava cake. You will need the brownie recipe below and a bag of hersey’s kiss or reese’s miniature peanut butter cups. Also some melted chocolate chips and whipped cream for garnishing. What a quick and easy yet very elegant dessert!

( I LOVE these plates! They are disposable and come in a pack of 20 at Kroger for about $3. It makes almost anything seems more special)

Easy Brownie Lava Cakes

2 cups Sugar

1 cup melted butter

1/2 cup cocoa

4 eggs

1 1/2 cup flour

1/2 tsp. baking powder

1 1/2 tsp. vanilla

Cream together butter and sugar, add the cocoa. Add the vanilla and the eggs one at a time, mixing well. In a separate bowl mix the dry ingredients together. Gradually add to the sugar mixture mix until well blended.

To make the lava cakes:

spoon into a well greased muffin tin enough batter to cover the bottom. Add an unwrapped miniature reese’s peanut butter cup or Hershey’s kiss. Cover with the remaining batter.

Bake @ 350 for 12-16 minutes. Do not over bake, you want these very moist. Let cool slightly, then invert onto a plate. Garnish with melted chocolate and whipped cream. Serve warm!
