Not only are banana split muffins delicious for breakfast, they also make a great snack or lunch treat.
Don’t these muffins look amazing! They take a banana muffin up a notch or two. I added all the good things I love in a banana split and made it into a muffin.
Plus they are just as easy to make. The most difficult part is cutting the cherries into quarters and that isn’t hard at all.
To make the muffins even more fun I sprinkled them with banana split sprinkles from Sweets & Treats
How do you make a Banana Split Muffins?
You will need:
- 1 cup sugar
- 1/2 cup butter, very soft
- 2 eggs
- 2 ripe bananas
- 1/2 cup crushed pineapple, drained
- 1 1/4 cup flour
- 1/2 tsp salt
- 1 tsp baking soda
- 2 TBL flour
- 12 oz maraschino cherries, drained & quartered
Preheat oven to 325 degrees
In a mixing bowl add the sugar, butter, eggs, and bananas. I add everything together and mix. When the bananas are ripe, my stand mixer mushes them right up
Mix until the bananas are smooshed and everything is well combined
Add the pineapple and mix well
To the bowl add the flour, salt and baking soda. I have been using this method for year with no problems. I put in all the dry ingredients together and then beat everything well.
Mix well, scraping the bowl at least once
In a small bowl gently toss the quartered cherries with 2 TBL flour. (This will keep them from sinking to the bottom)
Gently fold the floured cherries into the batter. Folding is easily done by hand with a rubber spatula. Don’t beat the batter, just gently fold it over itself until everything is combined.
fill muffin cups 3/4 of the way full with batter. I use a large cookie scoop to do this step.
Bake at 325 for 22-25 minutes. Or until the muffins are lightly browned and a toothpick inserted into the middle comes out clean.
It is very important to toss the cherries with flour. For some reason this trick keeps them all from sinking to the bottom of the batter. It helps to keep the cherries distributed throughout the muffin.
What are some variations to this recipe?
To mix things up add a cup of chopped pecans to the batter.
You could also serve them with a dollop of whipped cream and a cherry on top for a special occasion.

Banana Split Muffins
Banana muffins with crushed pineapple and maraschino cherries. Just like eating a banana split
Ingredients
- 1 cup sugar
- 1/2 cup butter, very soft
