The other day my son suggested that we have Chicken & Dumplings for dinner. I hadn’t made up a batch in a while and I couldn’t find the recipe I used so I looked for some inspiration and came up with this amazing recipe for Chicken & Dumplings. This recipe takes a little less time than some because I used canned chicken broth instead of making my own and it still tasted fabulous.
Now there are two different dumpling varieties out there. One is a type of biscuit cooked on top of the mixture and the other type of dumpling is more of a “noodle” or kinds of a flattened dough. I like what I call the “noodle” dumpling but they MUST be homemade and they are not hard to make. When making a meal like chicken & dumplings I love to add a lot of vegetables so it can be a one dish meal. This version is chocked full of carrots, celery and onions. My secret is that I chopped them up really finely in the food processor. This way I feel like I can add a lot of vegetables without changing the wonderful texture.
These dumplings are cooked in the chicken mixture after everything is added and they need about 20 minutes to cook thoroughly and then you can find their glorious goodness throughout the dish. They have such an amazing texture and flavor. This is definitely a comfort food that your family will love.

Chicken & Dumplings
- 2 TBL Olive Oil, Divided
- 3 boneless chicken breasts, cut into fourths
- 5 stalks celery, finely diced
- 8 oz baby carrots, finely diced
- 1 cup onion, finely diced
- 1/4 cup flour
- 56 oz low sodium chicken broth
- 1 tsp garlic powder
- 1 tsp Italian Seasoning
- 1/2 tsp black pepper
- 1 tsp ground sage
- 1/2 tsp salt
- 2 cups flour plus extra for rolling out
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp sugar
- 1/3 cup shortening
- 3/4 cup buttermilk can use regular milk
In a stock pot place 1 TBL olive oil over medium heat place chicken chunks in the oil and cook thoroughly. Remove from pot. Add 1 TBL olive oil to the pot & add the diced vegetables. Cook until tender (5-8 minutes) stirring every so often. While the vegetables are cooking shred the chicken with 2 forks. When the vegetables are tender sprinkle the flour over them and stir. Gradually add chicken broth, stirring to combine. Add garlic powder, Italian seasoning, pepper, sage and salt. Add chicken. Simmer for 15 minutes, while simmering make dumplings
Combine dry ingredients in a large mixing bowl. Mix shortening in with a fork until the mixture resembles small crumbs. (you can use your fingers also). Add milk a little at a time and mix until combined. Dump out onto a floured surface and knead a few times until not sticky. On a lightly floured surface roll out to 1/8" thickness. Cut into 2"x2" squares. Add dumplings to broth 10 at a time, stirring in between each batch of 10. Simmer for 20 minutes. Now it is ready to serve.
