For the second day of brunch week I am going to introduce you to one of my family’s favorite recipes, Baked Oatmeal. (Don’t forget to enter the fabulous giveaway. Scroll down to enter)
What is baked oatmeal?
Oatmeal fixed in this fashion has more of a casserole like consistency, but is healthy enough to enjoy for breakfast, brunch or dinner.
My version of baked oatmeal uses sour cream instead of butter so that the dish isn’t so heavy. You can use butter in the same amount if you wish. It also has cinnamon and nutmeg to add wonderful flavor.
This recipe also uses Dixie Crystals brown sugar. I feel that brown sugar gives it a deeper, richer flavor.
How do I make this recipe?
Preheat oven to 350 degrees
In a large bowl combine the oats, brown sugar, baking powder, salt, cinnamon and nutmeg.
Add the eggs, milk and sour cream to the bowl.
Mix well to combine.
Pour into a greased 8×8 baking pan.
Bake for 35-40 minutes until set and lightly browned.
What are some variations to this oatmeal recipe?
To mix things up you can add chopped nuts to the batter. You could also add some raisins or dried cranberries. When it is blueberry season, I think fresh blueberries baked in this dish would be divine.
We like to eat a slice with fresh fruit, or canned pear slices. Some people like to serve it warm in a bowl and pour a little milk over it.
I also like to just cut a piece and eat it with my hands like a snack cake. Any way fix it it will be delicious.

Baked Oatmeal Recipe

- 3 cups quick cooking oats
- 3/4 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup milk
- 1/2 cup sour cream
Preheat oven to 350 degrees
