Easy One Bowl Banana Bread

Easy one bowl banana bread is made with 3 ripe bananas and has been a family favorite for over 30 years.

I have been baking banana bread for over 30 years.  I have tried several different recipes, but have always come back to this one.  This recipe I discovered when I was about 10 years old.  My mom had it written in one of her cookbooks.  For me it has the best flavor, deep and rich without being too sweet.

When it comes out of the oven I let it cool for just a few minutes.  Just Enough so that I can handle it and then cut a big slice and slather it with butter, or just eat it plain.  The butter in the recipe crisps just a bit on the top edges and that is my favorite part.

I have found a few shortcuts to make this recipe a one bowl banana bread recipe.  I use an electric stand mixer and throw the ripened bananas in one at a time and let the mixer do the mashing.  Usually I will break each banana into two or three pieces as I put them in the mixer.

When it is time to add the dry ingredients I add them to the bowl all at once and then mix them in with the batter.  This has been the method I have used for years and I make a delicious banana bread out of it.

Typically I leave the banana bread plain, without any other mix-ins.  Every once in a while I will make chocolate chip banana bread by adding a cup of mini chocolate chips to the batter.  Fold them in right before putting the batter in the pan.  Banana nut bread can be made the same way by adding a cup of chopped nuts to the batter.

I have also used this recipe to make banana muffins.  For this recipe I baked it in one loaf pan, but you can also make two smaller loaves with the batter.  Just cut the cooking time by 10-15 minutes. Anyway you fix it this bread it will smell delicious as it is baking.  Plus it will bring smiles to any who are lucky enough to try it.

Easy Banana Bread

A classic easy banana bread recipe that is moist and delicious and makes the house smell so good while it is baking.

Prep Time 10 minutes
Cook Time 45 minutes
Total Time 55 minutes

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 3 ripe bananas
  • 1 1/3 cup flour
  • 1/2 tsp salt
  • 1 tsp baking soda

Instructions

  1. Preheat oven to 325

  2. with an electric mixer cream the butter and sugar together

  3. add eggs one at a time

  4. add bananas one at a time.  Mix well with the mixer to mash the bananas into the batter

  5. Add flour, salt and baking soda.  

  6. Mix well and beat on medium speed for 1 minute

  7. Pour batter into greased 9x5 loaf pan (or two for smaller loaves)

  8. Bake at 325 for 55-60 minutes, or until toothpick comes out clean (bake for 40-45 minutes if using two loaf pans)

Recipe Notes

To make chocolate chip banana bread fold in 1 cup mini chocolate chips before putting it in the pan.

Banana nut bread can be made by adding 1 cup chopped nuts before baking.
