Halloween is just around the corner which means it is time to carve our pumpkins. We have several family traditions for carving our pumpkins. We usually carve them the Monday before Halloween. I always turn on fun Halloween music on Pandora. The kids try and out do each other on their pumpkin masterpieces. I make these easy roasted pumpkin seeds and then when all is said and done we enjoy eating freshly roasted pumpkin seeds while watching “Garfield’s Halloween”. We look forward to doing this every year.
Roasting pumpkin seeds is easy to do and really not too time consuming. The first thing I do is to rinse off all the “guts” from the seeds. This may take a good 5 minutes of running them through your fingers under the water. I think we usually get about 3 cups of seeds from our pumpkins.
After a quick dry with some paper towels I place the seeds on a baking sheet, add 2 TBL melted butter and sprinkle 1-2 tsp of salt over the seeds. Stir them around to mix the butter and salt well with the seeds.
Let them cool a bit and then enjoy them while relaxing to your favorite Halloween special.
Easy Roasted Pumpkin Seeds
- 3-4 cups raw pumpkin seeds
- 2 TBL salted butter melted
- 1-2 tsp salt
- Clean the pumpkin seeds
- Place seeds on a baking sheet
- Add the melted butter
- Stir to combine
- Sprinkle with salt to taste
- Bake at 400 for 30-40 until nice and golden brown
- Stirring every 10 minutes
