There is nothing like walking in the door to the smell of a wonderful meal cooking and ready to eat. That’s what I experience when I prepare these easy slow cooker meatball sandwiches. They are so simple to fix with just 3 ingredients and they can simmer in the slow cooker all day long and ready just when everyone is super hungry.
This recipe is one of my go to favorites for busy Saturday’s. I like to keep a bag of frozen meatballs and a couple of cans of MANWICH on hand so I can throw together this recipe at a moments notice. A great place to pick up these ingredients is at Walmart. Whenever I am there I like to stock up on pantry staples like MANWICH, RO*TEL, and PAM so I am always prepared to serve a meal to my family. I also like to pick up some fresh buns from the bakery and fresh produce while I am there.
I also like to find ways to spend less time in the kitchen. As much as I like to cook and bake, I don’t want to spend all of my time in the kitchen. One of my favorite ways to make cooking easier is to prep my veggies for the whole week.
For instance, these meatball sandwiches are tasty sprinkled with some green onions. I also like to put green onions on my salads and in omelets. It is a PAIN to chop them each time I want to use them, so I wash and chop them all at once and keep them in a zip top baggie. BUT to help them stay fresh longer, I add a folded paper towel to the bag before I put in the onions.
This helps to keep the moisture off the onions and keeps them from getting ooey, gooey too quickly. I also use this for lettuce and grapes. It is amazing how much longer things will stay fresh just from using this simple method.
To make the meatball sandwiches I add about 24 frozen meatballs to the slow cooker and then add 2 15 oz cans of MANWICH to the meatballs and stir them around to get everything coated. I cook them on low for 4-5 hours. After 3 hours of cooking I add 3/4 cup barbecue sauce and stir everything until well combined and then let it cook for one more hour. Then you just put some meatballs on a bun, sprinkle on some onions and then enjoy. (the printable recipe is below)
This recipe is a hit with my kiddos. In fact, when we go and play in the Smokey Mountains, I usually fix up a batch of these meatballs that we can enjoy as soon as we come home.
