Fruit Cake Biscotti #christmascookies

Ah, fruit cake. That holiday day tradition that is beloved or hated. I don’t like store bought fruit cake, but homemade is a different store.

My aunt made some fruit cake cookies on year and I loved them, so I decided to try my hand at some fruit cake biscotti.

It is so colorful and flavorful and unique. You will need this recipe on your list to make this year.

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar
  • 1/4 tsp salt
  • 2 eggs
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg°
  • 1/4 tsp ground cloves
  • 1/2 cup chopped pecans
  • 1 cup chopped candied fruit mix

Instructions

  1. Preheat oven to 350°

  2. Line a baking sheet with a silicon baking mat or with parchment paper

  3. With an electric mixer cream together the butter, sugars and salt

  4. add eggs one at a time beating well after each addition

  5. In a separate bowl stir together flour, baking powder, cinnamon, nutmeg and cloves

  6. Add to butter mixture gradually

  7. beat at low speed until just blended

  8. Stir in pecans and candied fruit

  9. The mixture will be really sticky

  10. With buttered hands shape the dough into a 12×4" log on the prepared baking sheet

  11. bake until lightly browned 25-30 minutes

  12. Let cool for 20 minutes

  13. Using a serrated knife cut the loaf diagonally into 3/4 inch thick slices

  14. Place the biscotti slices on a baking sheet

  15. Reduce the oven temperature to 300°

  16. Bake the Biscotti for 10 minutes, turn over each piece and bake for an additional 10 minutes

  17. Let cool. Store in an air tight container for 1 week or freeze for up to 2 months

    Hi about to try your biscotti. Just read in directions to add sugars. I only see brown sugar listed in ingredients?
