Crunchy and full of pumpkin pie spice flavor. A homemade Granola sweetened with honey, molasses and chocked full a fall favorites like pecans, walnuts, pumpkin seeds and pumpkin puree.
Y’all, It’s Fall! Which means I am into all things pumpkin spice as is most of the USA.
Each year I like create new pumpkin spice recipes so I can bake and cook to my heart’s content.
There is nothing like baking something with pumpkin spice in it to make your home smell amazing. So not only do you get something super yummy to make, but your home will smell like fall.
How to make granola:
Homemade granola is surprisingly easy to make. The hardest things is gathering all the ingredients.
Ingredients:
- Old-fashioned oats: This is oatmeal, or rolled oats. They are found right next to quick oats in
- Nuts and seeds: pecans, walnuts, pumpkin seeds (pepitas), flax seeds, coconuts flakes are all great additions to granola.
- Spices and flavorings: The best granola’s have lots of flavor. Add that with spices such as cinnamon, nutmeg, cloves, all-spice, or just pumpkin pie spice. Vanilla or Maple flavorings also add great flavor
- Honey & Molasses: add a sweet taste without over powering. If you need it sweeter simply add more
- Pumpkin Puree: canned pumpkin is easiest to use. Just make sure it is only the pumpkin puree and not the canned Pumpkin Pie filling.
Most granola recipes have oil in them for added moisture. However, this recipes does not and it is still delicious, and crunchy.
Assembly:
- In a large bowl mix all the dry ingredients together. If you are adding dried fruit, save it until after you have baked the granola.
2. In a smaller bowl mix together the wet ingredients, stir really well to combine.
3. Pour the wet ingredients over the dry and mix until everything is well combined and the dry ingredients are moist.
4. Spread out on a cookie sheet lined with parchment paper or a silicon baking mat.
5. Bake at 350 for 45-60 minutes until browned, stirring every 15 minutes
How to store:
This granola with stay fresh up to 3 weeks in an air tight container. Or up to 3 months in the freezer.
Make sure your container does not let any air in, so that it stays nice and crunchy. It looks really good in a cute, glass container.
Variations:
The best thing about homemade granola is that you can customize it to your tastes so easily.
Think about these things you could add:
- Dried fruit: cranberries or cherries would be amazing
- More Spices: Use pumpkin pie spice (for quicker assembly) or add some ginger or allspice.
- Dark Chocolate: this would add amazing flavor and fun
- Sweeteners: If you would like it to taste sweeter add more honey or molasses. You could even add a couple of Tablespoons for brown sugar too.

Homemade Pumpkin Spice Granola

Ingredients
- 3 cups Old Fashioned Oats
- 1/2 cup pecans, chopped
- 1/2 cup pepitas (pumpkin seeds)
- 1/2 cup walnuts, chopped
- 1 TBL cinnamon
- 1 tsp nutmeg
- 1/2 tsp ground cloves
- 1/3 cup honey
- 2 TBL molasses
- 1 tsp vanilla
- 1/2 cup canned pumpkin puree (not pumpkin pie filling)
Instructions

Pre-heat the oven to 300 degrees

In a large bowl combine the oats, pecans, pepitas, walnuts, cinnamon, nutmeg, and cloves

Stir well to combine everything, making sure the spices are well distributed

In a medium bowl combine the wet ingredients: Honey, molasses, vanilla and pumpkin puree

Whisk the wet ingredients together until well combined

Pour the wet mixture over the dry and stir until all the dry ingredients are moist and everything is well combined

Pour onto a baking sheet lined with parchment paper or a silicon baking mat

Bake for 45-60 minutes, stirring every 15 minutes.

Bake the granola until it is browned to your preference

Remove from the oven and stir in any dried fruit if you like

Let cool to room temperature and store in an air tight container.
This looks so healthy & delish. I make have to make and take on my trip for Noah & I to snack on! Well, minus the nutmeg & clove and more like a tsp of cinnamon. These are the reasons I bake my own pumpkin pie to take places at Thanksgiving, LOL!
