When any holiday comes around I like to make it feel special by having some sort of themed food to serve my family and friends. Whatever I make I like to keep it simple and easy for me so that I am able to enjoy the holiday with my family. For Halloween this year I did pumpkin spice blondies, Christmas I always serve my famous Hot Cocoa for a Crowd, Valentine’s day I whipped up a batch of Cheese Puff Hearts and for Easter this year I am making Ice Cream Nests.
These ice cream nests are probably the most simple treat that I have made this year. They require no cooking or baking and they can be prepped in minutes. They will do better if you prep them ahead of time and then let them firm up in the freezer for an hour or longer. You can prep the day before or even longer if you cover them up in the freezer. The number one thing to remember is that you will need to use your hands to shape the nests, so make sure your hands are clean. They are also easier to serve if you place them right on the individual plates that you will serve them to your guests on. That way you just take them out of the freezer and serve them and you don’t have to touch the ice cream. They would also be really cute served in an ice cream cone.
These Easter Ice cream nests are simple to make and take just 3 ingredients:
Vanilla Ice cream
Mini Candy eggs ( I used cadbury mini eggs)
Scoop about 1/2 a cup of ice cream into a ball. Quickly roll the ball into the chocolate sprinkles. Place the ball on a plate and with your fingers gently form a nest shape. Sprinkle on a few more chocolate sprinkles and then place in the freeze for at least 1 hour. When ready to serve place 3 candy eggs in the nest.
