Today I am introducing you to my oldest daughter’s favorite Christmas cookie. I have been making these minty treats for years and they are always a big hit where ever I take them. I enjoy making them because they are fun, colorful and unique. Plus it is easy to put fun designs on them. There is a special, easy way to do this. It is a thin chocolate dough that is able to be piped on the pink cookie dough before baking. As they bake together they melt together and make a wonderful and unique cookie.
You can make these cookies any size you like. I prefer to roll them into a 1/2 inch ball to make a smaller cookie. You can get more out of a recipe. Plus I like to think I can eat more cookies this way! We have always used pink to color our cookie dough, but I have played with the idea of using green also. I think a green peppermint cookie would look pretty too.
Pink peppermint cookies are great tucked into a festive tin to giveaway to friends and neighbors. They are also a wonderful dessert served with my famous hot cocoa for a crowd. I love anything mint around Christmas time and these are wonderful dunked in hot cocoa. We love all cookies here at our house.
