It’s Fall Y’all Day 4:
If you want a Fall dessert that is easy to fix, smells incredible and will delight your guests, I have the dessert for you. It is called pumpkin delight, and yummy cannot even begin to describe the flavor. My mom has had this recipe for years and every time we make it I have a hard time not eating the whole pan. It has a traditional pumpkin pie filling on the bottom, BUT THEN is topped with yellow cake mix, melted butter and pecans. Three of my favorite things. It is ooey, gooey goodness that will let your mouth know that it is Fall. So without further adieu, here is the recipe:
1 15 oz can pumpkin
1 1/2 cups sugar
1/2 tsp salt
2 tsp pumpkin pie spice
1 13oz can evaporated milk
3/4 cup melted butter
1 box yellow cake mix
1 cup pecans, chopped
Blend eggs and pumpkin
Add sugar, salt and spices
Add evaporated milk, blend well
Pour into greased 9×13 pan
Sprinkle Dry cake mix evenly over the top.
Spoon melted butter over the top of the cake mix.
Sprinkle Pecans evenly over the top.
Bake at 350 for 70-90 minutes, or until golden brown.
Cool and serve with whipped cream.
Pumpkin Delight is wonderful served warm. While it is cooking your house will smell so good. And when you serve it, you will have your guests wanting seconds and asking for the recipe.
