I am so thankful that someone had the smarts and know how to invent the slow cooker. It sure makes my life of cooking wholesome meals for the family so much easier.
I love that I can throw a main meal in the slow cooker during the day when things are quieter around the house so that dinner will be easy to make when everyone gets home and things are a bit crazy.
My recipe for slow cooker pulled pork tacos is a family favorite. One of the things that I like about it is that each person can customize tacos to their own unique taste.
One of my kids likes lots of cheese and another prefers more lettuce. With this easy recipe to each his own without any fussing.
How to make Slow Cooker Pulled Pork Tacos
I use a 3-4 pound Pork Butt roast for this recipe. I wait of it to go on sale for a good price which is usually around $1 a pound. I then buy about an 8 pound roast and cut it in half and freeze one portion to enjoy this recipe in the future.
Even with doing that our family of 6 will have enough meat left for some great lunches during the week using this recipe.
Using your slow cooker
This recipe is so easy. Just put the roast in the slow cooker and blend these ingredients together and pour over the roast.
- 1 pork butt roast (3-4 pounds)
- 1 can diced tomatoes with chilies, undrained
- 4 TBL chili powder
- 2 TBL minced garlic
- 3 TBL lime juice
- 1 TBL honey
- 1/2 tsp salt
Then simply cook on low 8-10 hours and when the meat is tender shred the meat with two forks and mix with the juices in the slow cooker.
Putting together the pulled pork tacos:
The way you top your taco is very personal, so I leave that up to you 🙂 . Around these parts we use shredded cheese, tomatoes, lettuce, sour cream and my delicious homemade cilantro dressing. (I honestly can’t get enough of that stuff!).
Avocado would also be a delightful topping. To make the meat spicier you can add a tablespoon or two of chopped jalapeno pepper or some hot sauce depending on your tastes.

- 1 3-4 LB Pork Butt Roast
- 1 can diced tomatoes with chilies, drained (rotel tomatoes)
- 4 TBL Chili Powder
- 2 TBL Minced Garlic
- 3 TBL Lime Juice
- 1 TBL Honey
- 1/2 tsp salt
- 20 flour tortillas
- sour cream
- shredded lettuce
- shredded cheese
- diced tomatoes
- chopped cilantro
Place the roast in a 6 qt slow cooker
place the rest of the ingredients in a blender
Blend until smooth
Pour over pork
Cook on low for 8-10 hours
Shred meat with two forks
serve on warm tortillas with your preferred toppings
