Have you ever had the pleasure of eating a southern pimento cheese sandwich? A lot of cheese, a little spice and full of yum! It is one of those comfort foods that will make you relax and realize life will be ok. In this world of ours where we are able to communicate and travel so easily to far off places a lot of foods, expresions and ways of living are becoming more universal and less regional. At the very least we know more about different regions. That’s why I am still amazed, intrigued and inspired when I find things that people identify as from a certain region, or you can only find it there. I love that. I love that we can still have some identity of where we live and are from and share that with the world.
I have lived in the South most of my life and have eaten my fair share of pimento cheese, whether it has been on a sandwich, cracker or straight from the spoon. That’s when I was surprised when some of my Northern friends mentioned something about pimento cheese being southern and wondering exactly what it was. That is when I decided to share my homemade recipe for southern pimento cheese. Now lots of grocery stores carry the pre-made variety, but there is nothing like homemade. And it is SO easy to make!
Pimento cheese is wonderful to use for appetizers on crackers, served as a full sandwich, spread on celery sticks, or cut into finger sandwiches. There are so many ways to use these versatile and delicious spread. This version also has diced jalapeños for a little extra spice you can add more, less or none depending on your taste. You can find the diced pimentos in a glass jar in the vegetable isle of your grocery store. I hope you enjoy it!
Southern Pimento Cheese
homemade pimento classic with a bit of spice
- 8 oz cream cheese, at room temperature
- 2 3/4 cup grated sharp cheddar cheese
- 1/2 cup mayonaise
- 4 oz jar of diced pimentos, drained
- 3 TBL diced jalapeno peppers (optional)
- 1 tsp onion powder
- 1/2 tsp garlic powder
using an electric mixer, beat the cream cheese until smooth and fluffy
add all the remaining ingredients
mix well until blended
Store covered in the refrigerator
