Lasagna has been a staple in our house for years. My kids love it and it is really easy for me to fix. A few months ago my husband and I were trying to eat less carbs, so I decided to try a vegetable lasagna.
Basically I used the same, simple lasagna recipe I always use, except I sliced zucchini thinly and used those as the noodles. I also had some slices of smoked gouda on hand, so I used those along with some shredded mozzarella cheese.
All these ingredients together develop such an amazing flavor. Now my regular lasagna tastes a little bland. The zucchini does have a lot more moisture in it, so this lasagna can be a little more “soupy”.
You can slice up the zucchini and leave it on paper towels for a few hours to dry out to help create less moisture. Usually I just cut and assemble. It works and it tastes great.
It is also hard to take amazing pictures of it. To me it kept looking like a blob. A delicious blob though. I wish I could tell you just how amazing the flavors are.

Vegetable Lasagna with Zucchini
delicious veggie lasagna made with zucchini noodles and smoked gouda cheese.
- 4 medium zucchini, sliced
- 16 oz cottage cheese
- 1 egg
- 1/3 cup paramsean cheese
- 1 tsp garlic powder
- 1 tsp italian seasoning
- 24 oz spaghetti sauce
- 10 slices smoked gouda
- 2 cups shredded mozzarella
With a sharp knife or mandolin slice zucchini lengthwise
If desired you can lay zucchini out on paper towels for 3-4 hours to dry out. (you can skip this step if you want)
In a medium bowl mix together cottage cheese, parmesan, egg, garlic powder and Italian seasoning.
In a greased 9×13 baking pan spread 1/4 cup of spaghetti sauce
place 1 layer of zucchini noodles across the sauce
Spread 1/2 of the cottage cheese mixture over the zucchini
Spread 8 TBL spaghetti sauce over the cottage cheese mixture
Place 5 slices of smoked gouda cheese over the sauce
Sprinkle 1/2 cup mozzarella over the gouda
Place another layer of zucchini noodles
Spread the rest of the cottage cheese mixture
Spread 8 TBL spaghetti sauce
Place 5 slice of gouda and 1/2 cup of mozzarella
Place one more layer of zucchini noodles
Spread the rest of the spaghetti sauce and sprinkle with remaining mozzarella cheese
Cover with foil and bake at 350 degrees for 30 minutes
Uncover and bake for another 30 minutes
Let rest 5 minutes before serving
