Years ago when we were visiting a family friend she served us homemade whole wheat muffins. I was smitten with them as a teenager. The recipe was shared with my mom and it was written on a paper plate. My mom kept the recipe for years, but only made them once or twice. Recently I reconnected with our friend and she found her recipe and shared it with me. She even made them for my kids who instantly fell in love.
Often I think we hesitate with baking whole wheat goods for our kids thinking they will turn their noses up at them. Don’t be afraid to. Whole wheat is much more nutritious than the white bread that kids love. If they are brought up tastes whole wheat and whole grained baked goods they will enjoy the flavor. Whole grains have a more robust and tasty flavor than anything made with bleached white flour.
Even if you are not used to eating whole wheat, I think you will really like these whole wheat muffins. My son sure did. He devoured about 1/3 of the batch at one sitting and then asked when I would make more.

- 2 cups whole wheat flour
- 3 tsp baking powder
- 1/4 cup sugar
- 1/2 tsp salt
- 1 egg
- 1 cup milk
- 1/4 cup canola oil
- preheat oven to 400 degrees
- Grease a 12 cup muffin tin
- Mix all the wheat flour, baking powder, sugar and salt together
- Whisk in the egg, milk and oil
- Mix until well combined
- Fill muffin cups 3/4 full
- Bake 12-15 minutes or until a toothpick comes out clean.
