Skillet Cornbread

Ingredients

  • 1/3 cup butter
  • 1 1/2 cups self-rising white cornmeal mix
  • 1/2 cup all purpose flour
  • 2 eggs
  • 1 1/2 cups buttermilk

Instructions

  1. Place butter in a 10" cast iron skillet
  2. Heat in a 425 degree oven for about 5 minutes until melted
  3. Meanwhile stir together cornmeal and flour
  4. Whisk in the eggs and buttermilk
  5. Remove the butter from the oven.
  6. Swirl the butter to coat the skillet, then pour the remainder into the cornbread mix.
  7. Stir until blended
  8. Bake at 425 for 20-25 until just golden brown
  9. Serve warm, straight from the skillet

Recipe Notes

I use White Lilly white cornmeal mix
