Stir sugar, butter and milk over medium heat until sugar is dissolved
continue stirring while cooking slowly to soft ball stage (235 degrees)
remove from heat
stir in coconut and vanilla
place in buttered 8x8 pan and cut into squares at once
keep in an airtight container at room temperature for up to a week. It also freezes well for 6 months
