lots of spice and a little sweet. Great Biscotti for fall.
With an electric mixer beat together the pumpkin, oil, eggs, sugar and vanilla
Combine the flour, pumpkin pie spice and baking powder
Add the flour mixture to the pumpkin mixture and mix until well blended
Divide dough in half . Shape each portion into an 8 inc long roll.
Place rolls on a large baking sheet covered in parchment paper or a silicon mat.
Gently pat the rolls until they are 1" high
Bake at 375 degrees for 20 minutes until lightly browned.
Remove from oven and let cool for 10 minutes
Cut each roll diagonally into 1/2 inch slices
Place on cookie sheet cut side down and bake for 6 minutes
Turn the cookies over and bake the other side for 6 minutes
Place the chocolate chips in a microwave safe bowl
microwave at 30 second intervals stirring between each until chocolate is melted.
Dip half of each biscotti in the chocolate then lay on waxed paper and sprinkle with sprinkles
OR drizzle the chocolate over the biscotti.
