Strawberry Pecan Bars

a delicious shortbread crust and topping with a sweet, tart jam middle. Truly delicious.

Ingredients

  • 1 cup butter at room temperature salted
  • 1 cup sugar
  • 1 egg
  • 3 cups flour
  • 1 cup chopped pecans
  • 2 cups low-sugar jam strawberry, raspberry, etc

Instructions

  1. Preheat oven to 350
  2. Grease a 9x13 pan
  3. Combine butter and sugar, beat until light and fluffy
  4. Add egg and beat well until combined
  5. Gradually add flour and pecans
  6. Mix well, the mixture will be a little dry and crumbly
  7. Pat 1/2 the mixture into 9x13 pan
  8. Bake 12-15 minutes or until just barely golden brown (do not over bake)
  9. Remove from oven and immediately spread jam over entire area
  10. Crumble remaining dough over jam
  11. Press gently into the jam
  12. Bake 25-30 minutes, or until golden brown evenly on the top.
  13. Cool completely before cutting into squares.
