Pumpkin Chip Cookies

Ingredients

  • 1/2 cup Butter softened
  • 1 cup brown sugar
  • 1 egg
  • 1 cup canned pumpkin
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp nutmeg
  • 1 1/2 tsp cinnamon
  • 1/8 tsp ground cloves
  • 1 cup mini semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. With an electric mixer, mix butter, egg, and brown sugar until fluffy
  3. Add the pumpkin and vanilla, mixing well
  4. Add the dry ingredients and mix to incorporate
  5. Mix in chocolate chips
  6. Dough will seem sticky and soft
  7. Drop onto a greased cookie sheet
  8. Bake at 350 for 8-10 minutes
