Banana Split Muffins

Banana muffins with crushed pineapple and maraschino cherries.  Just like eating a banana split

  • 1 cup sugar
  • 1/2 cup butter, very soft
  • 2 eggs
  • 2 ripe bananas
  • 1/2 cup crushed pineapple, drained
  • 1 1/4 cup flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 TBL flour
  • 12 oz maraschino cherries, drained & quartered


  1. Preheat oven to 325 degrees

  2. In a mixing bowl add the sugar, butter, eggs, and bananas

  3. Mix until the bananas are smooshed and everything is well combined

  4. Add the pineapple and mix well

  5. To the bowl add the flour, salt and baking soda

  6. Mix well, scraping the bowl at least once

  7. In a small bowl gently toss the quartered cherries with 2 TBL flour.  (This will keep them from sinking to the bottom)

  8. Gently fold the floured cherries into the batter

  9. fill muffin cups 3/4 of the way full with batter

  10. Bake at 325 for 22-25 minutes.  Or until the muffins are lightly browned and a toothpick inserted into the middle comes out clean.
